01What the one visit can cover
We look at four linked areas in the same premises, according to its menu, layout, people and agreed scope.
- Food hygiene: food safety methods, temperature, cleaning, cross-contamination and staff practice.
- Allergens: ingredients, recipe changes, customer information and kitchen hand-off.
- Fire: hazards, escape arrangements, warning, emergency plan and existing assessment.
- Staff safety: slips, burns, cuts, manual handling, equipment and relevant COSHH controls.

Have the records you already use available; there is no need to create a new binder just for our visit. Tell us if an assessment or record is missing so we can identify the gap honestly.
- HACCP-based or SFBB procedures, recent temperature and cleaning records, menus, recipes and allergen information.
- Fire risk assessment, evacuation arrangements, alarm and equipment maintenance, staff fire training.
- Workplace risk assessments, relevant COSHH information, training and recent accident or near-miss records.

We walk the agreed areas with the owner or manager and speak to staff where useful. We check how controls work during normal activity, not just whether a form has been completed.
- Follow food from delivery and storage through preparation and service.
- Trace one allergen question from customer to kitchen and back.
- Walk escape routes and inspect the tasks that expose staff to everyday hazards.

The report separates what we observed, what the records showed and what we could not verify. You receive a priority action list with suggested owners and target dates; urgent concerns are raised during the visit. This independent review is not a council inspection and cannot award or promise an official rating.
- Clear actions for the owner or manager to assign and close.
- Separate referrals for any technical or specialist work outside the agreed review.

A formal fire risk assessment is a separately agreed task only where the assessor has suitable competence for this premises. Technical testing and licensed work need the appropriate provider; we identify those tasks rather than treating a general visit as a substitute.
